So, will the South Melb first team play in the Championship or the OFC pro league?

The competitions have zero overlap

For someone like Seth Clark (an ex Cantab) at Sydney Olympic the Aus Championship could even be a shop window, if South Island FC were interested in signing him for the OFC League.

Would though mean almost 18 months of continuous football if Clark, or other NPL Kiwis like Ott, Wellsmore, Feutz, Zoričić were an option for the OFC comp
