The story I heard was that the modern flat white was invented in Bodega, there were other similar coffees before that.

If we're talking about the Wellington Coffee scene we should talk about the real innovation that Carmen had in the 70's which was merging Cafe's and Brothels. There was a code about how you placed the cup on the saucer, which direction the handle was facing indicated what sort of escort you wanted. It would probably be awkward if you went into one of her cafe's looking for a coffee and ending up with something else, especially if you placed the cup the wrong way.

Sadly that innovation didn't catch on like the flat white.

Basically there were other coffees similar to a flat white, but the exact modern recipe was invented in Bodega in 1989.
