Its called human nature. If you figure the average pro footballer to make 2-3 mistakes in 90mins, you surely have to allow the referee the same, although

Players, as you rightly pointed out, are prone to mistakes but the difference between their mistakes and a Referees mistake is that a player has the season to make it up and if he costs his team a goal or 3 points he can either be dropped by his manager or given the opportunity to repay his team.

They are much the same. If a player makes a mistake in the grand final, how can he repay that over a season and make up for it, he can't. If a referee makes a mistake in the grand final, he gets remembered as a goose. Players can make it up over a season just like referees can spend a season reviewing and reflecting on things to make sure he gets it right next time.
I think you'll find that referees are dropped and are changed around. Because its not published, doesn't mean it doesn't happen. I think it happened in the last round where a referee was taken off a game as a 'punishment' step and subsequently not involved in the play offs
Ultimately, I view it all as a partnership. For the game to succeed, you need good players, good coverage, good support and good officials. Take away one of them and the game is let down. They all work together to create something there.
